Shay's Asparagus Tart

Chef de Partie Shay has been developing this tart over the summer and has found the perfect balance of elements creating a rich yet light snack as we introduce the menu. Asparagus custard tart, raw stems and nibs pickled in elderflower vinegar. Pastry made with Kirkhams Lancashire cheese.
