Tarroco Blood Oranges

Each new year we begin by receiving an annual delivery of Tarocco blood oranges via ship from Italy. These oranges are the only over seas produce that we use at the restaurant, the scarcity of citrus fruits that we use in our menu can really be felt by their presence. They bring a much needed influx of colour and joy in the winter months. We will process these oranges to use throughout the year in as many ways as possible through preservation. 

Cal visited Marrakesh over the winter break, bringing with him this technique of salt preservation. This method draws all of the juice out of the fruit and cures the skins making them edible, we are then left with the pickling liquor that is drawn from the oranges that we also use.We make the exception in using this imported produce due to their mode of transportation which is massively less impactful to our environment than arriving by plane.
