Lyme Park Venison



 Just before we took leave for our winter break, Sam headed over to Lyme Park with Marcus from Littlewoods to butcher three animals they have provided for the restaurant. Over winter numbers of Red deer are culled as part of a process of sustaining a healthy population and preserving the gazing pasture to ensure a strong heard. The Deer were skinned, broken down into primal cuts and have been hanging to age for three weeks. Today we reopen our doors and we are very excited to welcome you all back, Happy New Year!
