Join us for an inspiring afternoon with Doug McMaster, founder of Silo, the world’s first zero-waste restaurant. Doug is a true pioneer of sustainable dining, going beyond the claims of sustainability to create a business model that is entirely kind to the planet.
At Silo, plastic is shunned, with suppliers delivering produce in reusable containers and old plastic bags upcycled into colourful plates. The team works with ingredients that would otherwise go to waste, such as beef from retired dairy cows, and composts all leftovers. Despite this uncompromising commitment to zero-waste practices, Silo’s tasting menus remain stunning works of culinary art, proving that sustainability doesn’t come at the expense of taste or creativity.
The event will be introduced by Sam Buckley, chef and founder of Where The Light Gets In, who shares Doug’s vision for redefining food’s role.
