Maraschino: a 30-month-old Red Poll bullock from Helen Arthan’s farm in Malpas, Cheshire. The herd is raised on old permanent pastures with minimal inputs and managed under an environmental stewardship scheme.

Over the next month, we’ll explore his story, using every part of him to rethink fast food—from history to future.
