The Landing Produce

The first dish on our menu is an introduction to or produce from the landing, and this one is all about broad beans. We are entering the last of the seasons beans, here they are cooked over coals in their skins and with the outer husks we make a chilled juice. Alongside fresh garlic mousse, pickled wild garlic stems, goats curds from Thornby Moore dairy in Cumbria and a potato cracker
