Cornish Squid

A continuation of bad weather conditions in Cornwall has meant that our suppliers have struggled to go out on their day boats and catch their usual fish, however they have been able to provide us with these beautiful squid. They will be barbecued and served alongside toasted barley porridge cooked in a crab shell bisque. As we enter the months of the hunger gap and the fresh greens slowly fall from the menu, hearty dishes begin to appear that reflect the need for warmth as the cold sets in outside.
