The Egg Project

This project marks the beginning of the Where The Light Gets In Residencies, a collaborative project developed in collaboration with artist Kathryn Wood.


A tartare dish on the tasting menu meant that we were left with surplus egg whites. Kat then used these to develop photographic portraits of local free-range poultry farmers.

The photographs were developed in the form of albumen prints, an 18th century printing technique using egg whites, salt and sunlight.
