The Egg Project

This project was made in collaboration with artist Kathryn Wood.
A tartare dish on our tasting menu meant that we were left with surplus egg whites, which were then used to develop photographic portraits of local free-range poultry farmers.

These were developed in the form of albumen prints, an 18th century printing technique using egg whites, salt and sunlight.
