Joining us for the very special Act 4: Supra takeover on Thursday, the 13th of March, will be John Wunderman of Georgian winemaking estate Pheasant’s Tears.
Founded in 2007, a joint project between John Wurdeman and Gela Patalishvili, Pheasant’s Tears was set up to revive the ancient traditions of Georgian winemaking. The vineyard plantings flow down the slopes of the eastern Georgian Kiziqi province overlooking the Alazani Valley and snow-capped Caucasus Mountains. Pheasant’s Tears owns several vineyards spread over several villages - there are 15 ha currently under vine, plus various others in the process of being planted. In Tibaani, John and Gela are dedicating vineyards to rare white varietals.
Our chefs Sam Buckley and Callum Higgins visited Pheasant’s Tears on their recent trip to Georgia and will be cooking a menu, inspired by the trip. John will be bringing along special ingredients for the evening, including spices and ferments, baking a traditional khachapuri, and opening rare Pheasant’s Tears bottles.
