This week easterly winds in Helford has meant that we haven’t had access to our usual supply of fish. In response we have these Mussels from the Shetland Islands, steamed and stuffed with three cornered leek foraged in Stockport, Tarroco blood orange and a blood orange verjus. Tom yum broth, spring onion oil , fermented chilli from the Landing, fish sauce and orange leaf.
