Sladesdown Farm pekin duck, aged for two weeks, smoked and finished on the barbecue. January king cabbage glazed in duck garam, damson boshi & onions cooked in yoghurt whey.
Sauce made from the duck’s bones, plum county wine & rancio.

The ducks are grown and finished on all natural feed with no added growth stimulants or antibiotics.
