Sea Buckthorn Foraging

Monday saw the team head over to the Merseyside coast line for our annual sea buckthorn foraging expedition. This native species is found by sand dunes and is most noticeable Autumnal months when the bushes show off their hyper citrus fruits. We managed to get a decent amount whilst still leaving plenty behind, when they arrive at the restaurant, we freeze the branches which makes it far easier to remove the berries from their thorny stems. Sea Buckthorn has a flavour that matches the intensity of its colour, they also contain up to 16 times more vitamin C than an orange which is impressive due to the size discrepancy between the fruits.
