A Whole-Animal Dinner in Support of EatWell MCR

Since opening our doors in 2016, we’ve committed to using whole animals in our kitchen. This decision, made by Sam from the outset, aims to minimise food waste by utilising every part of the animal—from nose to tail. It’s a practice that shows respect for the animal and supports the farmers we work with by purchasing the entire carcass rather than just the popular cuts. Most importantly, it creates a deeper understanding of where our food comes from, both for our team and our diners.

The meal begins long before it reaches the plate. It starts in the fields, where animals are raised with care. It continues with the skilled hands that break down the animal, and in the kitchen, where every part is used in creative and thoughtful ways.

On Monday, 10th February, we invite you to join us for a meal, to celebrate this process. Throughout the day, a group of chefs from Manchester’s top restaurants will work alongside Samuel Buckley of Where The Light Gets In and Marcus Wilson of Littlewoods Butchers. Together, they’ll learn the art of whole-animal butchery, how to source ethical meat and how to creatively use lesser-known cuts.

The outcome of their learnings will be served during a communal meal. Doors at 7PM, at Erst.
Tickets are £40 & ticket sales for this meal will go directly to Eat Well MCR, a charity providing nutritious meals to families experiencing homelessness, women in sheltered accommodation, parents of children in hospitals, food banks, and schools supporting those affected by food poverty.
